Choi Min Soo là nam diễn viên nổi tiếng của Hàn Quốc, với một số bộ phim như Warrior Baek Dong Soo, Faith,...

Choi Min Soo sinh năm 1962 tại Seoul, sinh trưởng trong một gia đình làm nghệ thuật. Ông là con trai của Choi Moo Ryong, một diễn viên nổi tiếng vào thập niên 60, 70 và nữ diễn viên Kang Hyo Shil. Ông bà ngoại của Choi Min Soo là Jeon Ok và Kang Hong Shik cũng là diễn viên và là cặp đôi kết hôn đầu tiên của nền giải trí Hàn Quốc.

Choi Min Soo gặp vợ mình trong chương trình Miss Korea Beauty Pageant năm 1993, vợ ông là June Elizabeth Kang, đại diện cho Miss Canada trong cuộc thi năm đó. Ông đã ngỏ lời với vợ mình chỉ 3 tiếng sau khi hai người quen biết. Họ kết hôn tháng 6 năm 1994 và giờ đã có hai con là Christian (sinh năm 1996) và Benjamin (sinh năm 2001)

Choi Min Soo tốt nghiệp trường đại học nghệ thuật Seoul ( Seoul Arts College). Bộ phim đầu tiên của ông là Son of God năm 1984, được chuyển thể từ bộ truyện tranh cùng tên của tác giả Park Bong Seong.
